Heading back to Chicago tomorrow in time to (traffic willing) catch the final night of the big American Cheese Society conference at the Hilton downtown; check out the Cheese Underground for a preview.

On Sunday (digestion willing) I’m planning to hit the  big end-of-show sale, where alleged hundreds of artisan and specialty cheeses will be on offer at rock-bottom prices. Because what cheesemaker wants to lug pounds of bandaged cheddar back to Vermont? It’s Sunday from 10-1 in the fifth-floor dining room at Kendall College, 900 N. North Branch ( just up from the northwest corner of Chicago and Halsted). My hunch is that anyone showing up later than 10:30 will have to make do with Sargento for the rest of the summer.
